Get Tanked: Night diving in Hawaii will give you a natural buzz. Photograph by Paolo Curto/ Getty Images |
Manta Ray Night Dives in Hawaii
The manta rays off the Kona Coast of Hawaii ham it up for audiences almost as much as American Idol contestants. Divers sit on the ocean floor and shine spotlights above to attract plankton, which then draw in the rays (with wing spans up to 12 feet), who glide, pivot and somersault during nightly performances. Jack’s Diving Locker offers two-tank night dives. $115 per person; 800-345-4807; www.jacksdivinglocker.com.

Kayak Fishing in Florida Add a little twist to the classic battle of man versus fish. Adventure Kayak Fishing tours leave the motorboat at the dock and place you in a 12- to 16-foot, sit-on-top sea kayak. Winter trips take anglers in search of red fish, snook and sea trout along various creeks and inshore flats on the east and west coasts of Florida. Packages range from $140–$220; 727-858-5851; www.adventurekayakfishing.com
Surfing Camp in Baja When you head to Baja Mexico, it’s good to have someone who knows the local surf spots and where to get the best lobster burrito. During the winter months, San Diego Surf Academy heads south of the border to take advantage of swells between Rosarito and Ensenada. A gated community serves as home base from where guests depart for daily two-hour surf sessions. Four-day packages cost around $950 and ground transportation from San Diego is provided. 800-447-SURF (7873); www.surfsdsa.com
